I would just mention for the interest of the "knife guys" that I used a CRKT M-16 non-serrated (I don't know what idiot first designed serrated blades but I would like use a knife to keep him from reproducing and totally ruining the gene pool).
By going along the rib joints of the breast bone and avoiding prying motions I got the calf opened up all the way to the neck.

Interesting tidbit is that the yellow jackets were abundant and as I reached up inside to remove the tenderlions one of them took offense to being smushed and stung me.
