Haven't tried fishing for gills with a fly, not too many places to find them here in Oregon but they are here.
The "Octobolator Caddis" (my made up name as it is part October Caddis with some Stimulator style front hackle) is for fast water and trout. The extra hackles help it float and our October caddis is a large very orange insect that hatch about now.
Agree with larger hooks when possible for seeing.
