The Leathermans' are designed to be opened with one hand. I think. Else I'm opening it all wrong.

A Benchmade with an Axis lock would be a good starting point, a chimp without thumbs could open one.

Wait a minute, did you mean, see a man "pocket" a knife, or one that is easier to employ one handed.
