Grandpas Crocked Pot Chicken Taco Soup
Feeds 4 persons or one Grandpa.
Ingredients: 1 chopped onion 1 (16oz can) chili beans 1 (15oz can) black beans 1 (15oz can) whole kernel corn, drained 1 (8oz can) tomato sauce 1 bottle beer (no lite beer please) 1/2 Cup white wine 2 (10oz cans) diced tomatoes with green chilies, un-drained 1 cup cheddar cheese, cubed 1 red chili pepper, diced 1 (1 ¼ oz) package of taco seasoning 1 can green Ortega chilies, diced 1 clove garlic, minced 1 TSP cumin seeds Salt & pepper 1 TBS olive oil 3 whole skinless chicken breasts Crushed tortilla chips 1 cup shredded cheddar cheese (optional) Sour cream (optional) Driections: Place chili beans, black beans, corn, tomato sauce, beer, wine, peppers, spices, and diced tomatoes in a 6qt slow cooker. Meanwhile, sauté onions and garlic in skillet with olive oil until translucent. Cut chicken in 1” strips and brown in skillet with onions and garlic. Add a little chicken broth to the skillet and scrape up the crumblies and put them in the slow cooker. Put everything else in the slow cooker and cook for 5 hours on LOW heat. After 5 hours (or when the chicken is done) remove chicken strips and shred. Stir the shredded chicken back into the solution stir it all up and continue cooking for 2 more hours. When you think it's done, serve in warm bowls with crushed tortilla chips on top and a dollop of sour cream or some shredded cheddar cheese (if desired). Include candlelight, a friend who'll put up with you, and a good story and you have one heck of a great dinner. Enjoy! |
